Hemp Seed Hearts and Nut Spread or Butter

A healthy alternative to commercial products, it is easily made and keeps in the fridge for several days. Take equal quantities of hemp seed and any nut you choose; sunflower seeds add a lovely, creamy emulsifying effect. Toasting them adds another twist in flavours.

Choose whichever nut you fancy. Classic peanut butter with shelled hemp seed is fantastic. Use the basic recipe and see what combinations you can come up with. Favourites like cashew, peanuts, pistachio or almonds produce great results.

Ingredients:

(will give about a small jar, will keep in the fridge for up to a week)

100 grams nuts (see examples below)
100 grams hemp seed or 30-40 grams of shelled
50 grams sunflower seeds (toasted or not)
1 dessertspoon honey

Directions:

Toast the sunflower seeds in a dry pan if desired. Grind the hemp, sunflower seeds and nuts you are using as fine as possible, then mix them together in a bowl with the honey, to form a paste. Spoon into a sealable container and enjoy on toast or bread.

Made with peanuts and served with red current jelly is a firm children’s favourite.

Apple Heart Muffins

Makes: 12
Prep Time: 10 min.
Cook Time: 25 min.

Ingredients:

2 cups whole wheat flour
1 tsp baking soda
1/4 tsp ground cinnamon
1/4 tsp ground ginger
1/4 tsp ground allspice
1/4 tsp ground nutmeg
1/4 rounded tsp salt
2 large eggs
1 cup plus 2 tbsp frozen, thawed apple juice concentrate
2/3 cup buttermilk (or non-dairy milk)
2 tbsp oat bran
2 small Granny Smith apples, peeled, cored, and chopped
1/3 cup hemp seed hearts

Directions:

Preheat oven to 350C. Grease 12 standard size muffin-pan cups.
Mix together flour, baking soda, cinnamon, ginger, allspice, nutmeg and salt. Mix together eggs, apple juice and milk. Stir flour mixture and oat bran into egg mixture until dry ingredients are just moistened. Do not over mix. Gently stir in chopped apples and hemp seed hearts. Spoon batter into prepared pan, filling cups 2/3 full. Garnish each muffin with an apple slice, sprinkle with hemp seed hearts.

Banana Bread

Makes: 1 loaf
Prep Time: 10 min.
Cook Time: 45-60 min.

Ingredients:

2 eggs
1/3 cup applesauce
2/3 cup sugar
2 cups whole wheat flour
2 3/4 tsp. baking powder
1/2 tsp. salt
1 cup mashed very ripe bananas (about 3 medium)
1/4 cup hemp seed hearts
1/4 cup chocolate or carob chips (optional)

Directions:

Preheat oven to 300 degrees. Mix first 3 ingredients with mixer at medium speed until pale yellow. Add dry ingredients alternately with bananas to mixture. Mix at medium speed until well blended. Pour into greased or sprayed loaf pan (9 x 5 or 8 1/2 x 4 1/2). Bake 45-60 minutes, until cake tester comes out clean and dry. Let cool in pan 20-30 minutes before turning out onto rack.

In the past two years, raw shelled hemp seeds have become well nutritious value. Although recognized as a superfood by some, they’re still carrying the cannabis family stigma. Hemp and marijuana are frequently in the news these days, providing us with plenty of information about the benefits of marijuana’s nutrient-dense cousin.
Unlike marijuana, it is legal to consume hemp in the United States. Marijuana and industrial hemp are not the same plant; they are different species of Cannabis sativa L. While marijuana contains 3-15 percent of the psychoactive ingredient delta-9-tetrahydrocannabinol (THC), industrial hemp has less than 1 percent. Despite this fact, growing hemp is still illegal in the majority of United States and, interestingly enough, the U.S. has the highest consumer rates of hemp foods, soaps, lotions, and other products.

The centre, or “heart” of raw hulled hemp seeds is the most nutritious part. It is an excellent source of protein, essential amino acids, dietary fibre, and omega 3 and 6. It also contains antioxidants, vitamins,  minerals, manganese, and zinc, to name a few. They are energy-boosting and stabilize appetite, while improving digestion. As well as being a superfood, they are gluten-free and make an excellent replacement for those with nut allergies. They make a nutritious, and tasty addition to yogurt, salads, wraps, desserts, stir-fries, smoothies, cereals, and baked goods.

Hemp Hearts Recipes: Hemp Rice Krispie Squares

A Stunning & Healthy Remake of an Old-Fashioned Family Favourite

Out with the marshmallows sugar blast that sends your blood sugars soaring. Instead this hemp hearts recipe offers natural and low glycemic index sweeteners combined with hemp and nut proteins gives your body a slow rising energy boost, and brown rice cereal replaces the empty carbs of regular crispies.

Ingredients:

1 1/2 cups brown rice syrup or coconut syrup
2/3 cups tahini or almond butter
2 tbsp. coconut oil
1 tbsp. vanilla
9 cups crispy brown rice cereal
1 cup hemp hearts
1 tsp. to 1 tbsp. cocoa powder (opt.)
1/2 cup Goji berries or dried cranberries (opt.)

Directions:

Line baking pan with ext. long sides parchment paper. In saucepan, heat syrup over med. heat and stir until it begins to bubble a bit. Remove from heat and stir in butter. oil, vanilla and cocoa (if using). The mixture will thicken and become glassy and elastic, like caramel taffy.

Put rice cereal, hemp hearts and goji berries (if using) in a large heat-safe bowl. Carefully pour in warm syrup mixture and stir with wooden spoon til all combined.

Scoop into lined baking pan and spread evenly. Cover with parchment paper and place in fridge to chill.

Makes 16 squares.
